FOOD: Walking towards the entrance you can already smell the rich, sultry fragrance of the food that invites you in. The menu focuses mainly on Filipino dishes that will satisfy the taste buds for those who have that craving. You must try the house specialty sisig, served on a hot plate. Once you’ve dug in, you’ll instantly know why it is a bestseller. The crispy pata is a must have, for a Filipino feast wouldn’t be complete without it. The bulalo is indeed scrumptious, served nice and hot- perfect for the cooler climate of Tagaytay. The Dencio’s pancit is one pick you shouldn’t miss, and the pusit a la pobre is a must-try that deviates from the usual inihaw, with lots of garlic, gravy and the squid cooked just right. For dessert, the signature turon de sorbetes tops the list, followed by the leche flan and the buko pandan.

SETTING: Since renovating a couple of years back, the decor at Cowrie Cove has always been impeccable. The entryway’s burning flames and the Mactan stone pillars rising toward elegant Thai-inspired roofs renders a kind of reverence to the building experience.
FOOD: Pla muck sai thong is a dish akin to what we commonly know as calamari. Properly battered and fried, its exotic name belies its simplicity. The phad Thai noodles are tasty, evened out by the crunchy bean sprouts and the fresh prawns. Specialties here are the lobster with cheese and garlic topped with onions in a white wine sauce and the pan-fried tiger prawns in a red wine reduction, which are extremely fresh and a joy to eat. The stir-fried pak choy topped with garlic is a welcome diversion from the savoury layers that build up in your mouth. Most of the mentioned dishes tend to be towards the sweet side, so if you like your seafood as close to au naturel as possible, there is live seafood where you can choose the method and the seasoning- from grilled to steamed, with chunky tomato or in the native style (with vinegar and soy sauce), as well as lime chilli-garlic or lemon butter- just a few of what they have on offer. The menu is reminiscent of seafood market stalls; the presentation is a very casual and yet, Shangri-la’d by their choice of china and glassware.
WINE: A prolific selection of top labels to match the top-notch menu.
SERVICE: A good range, coupled with the fact that you are always well-attended to as is normally expected of a five-star hotel, you could easily spend at least four hours at dinner and not notice.
PRICE: Top-notch seafood at a dramatic locale makes it well worth it.

Add smoked mussels, fresh oysters and lobster tails into the sushi-cum-seafood mix and all of one’s pescatarian cravings are met. Quite easily the best buffet (not only in terms of gastronomic medley of cuisines and experimental flavours but in presentation as well) in Manila, Circles’ gourmet line-up offers diner’s a marvellously exhausting range of local fare as well as beguilingly distinct and experimental dishes from the Malaysian, Indian, Indonesian, British and Chinese corners. The breakfast buffet also follows suit, offering flavours that span the four corners of the globe.
WINE: The list is a fine selection that would meet any world-class hotel standard. Some interesting imported names also crop up in the bar list such as Australia’s Coopers Ale and Sparkling Ale.
SERVICE: Not a single bad word can be said about the quality of service here. The wait staff are well groomed, on the ball and five-star refined, thus completing the ultimate dining experience.
PRICE: Whether you’ve brought your appetite with you or not, the amazing spread at Circles is complete value for your money; you can literally see where your money goes.
